The performance of cocoa butter and its crystallization characteristics are crucial for the consistent quality of chocolate. We fully deodorized cocoa butter, so it will not aff ect the colour and flavor of your cocoa liquor. It gives to your chocolate the best texture.

  • Moisture (%): 0.3 max.
  • Iondine value (Wijs): 32-38
  • Peroxide value: 4 max.
  • Saponification value: 188 - 198
  • Unsaponification matter (%): 0.35 max.
